Ingredients
Scale
- 1 lb ground beef (or ground turkey for a leaner option)
- 1 onion (chopped)
- 1 packet taco seasoning
- 1 packet ranch dressing mix
- 1 can (15 oz) black beans (drained and rinsed)
- 1 can (15 oz) kidney beans (drained and rinsed)
- 1 can (15 oz) corn (drained)
- 1 can (14.5 oz) diced tomatoes (with green chilies or plain)
- 1 can (10 oz) diced tomatoes with green chilies (optional for extra heat)
- 2 cups beef broth (or chicken broth)
- ½ cup water
- 1 tsp cumin
- ½ tsp garlic powder
- ½ tsp chili powder
- 1 tbsp olive oil (for cooking)
Toppings (optional but recommended):
- Shredded cheese 🧀
- Sour cream 🥄
- Sliced green onions 🌿
- Tortilla chips 🍽️
- Fresh cilantro 🌱
Instructions
- Cook the beef:
In a large pot, heat olive oil over medium heat. Add chopped onion and cook until softened, about 5 minutes. Add the ground beef (or turkey) and cook until browned, breaking it up with a spoon. - Add the seasoning:
Stir in the taco seasoning and ranch dressing mix. Combine well and let it cook for another 2 minutes to bring out the flavors. 🌶️ - Add the veggies and beans:
Pour in the black beans, kidney beans, corn, diced tomatoes (both kinds if you like extra spice!), and beef broth. Stir to combine. - Simmer the soup:
Add water, cumin, garlic powder, and chili powder. Stir everything together and bring the soup to a simmer. Let it cook uncovered for about 20-25 minutes, allowing the flavors to meld together. - Serve & garnish:
Ladle the taco soup into bowls and top with your favorite toppings: shredded cheese, sour cream, green onions, tortilla chips, or fresh cilantro! 🌿🍽️
Notes
- Make it Spicy: Add a chopped jalapeño to the soup while simmering for extra heat!
- Thicker Soup: For a heartier soup, use less broth or add a cup of cream cheese for richness.
- Prep Ahead: This soup is even better the next day as the flavors continue to develop!
