  • 1 can (15 oz) kidney beans (drained and rinsed)
  • 1 can (15 oz) corn (drained)
  • 1 can (14.5 oz) diced tomatoes (with green chilies or plain)
  • 1 can (10 oz) diced tomatoes with green chilies (optional for extra heat)
  • 2 cups beef broth (or chicken broth)
  • ½ cup water
  • 1 tsp cumin
  • ½ tsp garlic powder
  • ½ tsp chili powder
  • 1 tbsp olive oil (for cooking)

Toppings (optional but recommended):

  • Shredded cheese 🧀
  • Sour cream 🥄
  • Sliced green onions 🌿
  • Tortilla chips 🍽️
  • Fresh cilantro 🌱

Instructions

  • Cook the beef:
    In a large pot, heat olive oil over medium heat. Add chopped onion and cook until softened, about 5 minutes. Add the ground beef (or turkey) and cook until browned, breaking it up with a spoon.
  • Add the seasoning:
    Stir in the taco seasoning and ranch dressing mix. Combine well and let it cook for another 2 minutes to bring out the flavors. 🌶️
