The Art and Science of Making Crystal Candy

  • Author: laura
  • Total Time: 4-7 days (for crystallization)
  • Yield: Varies based on size of jar and skewers
  • Diet: Vegetarian

Description

Crystal candy is a fun, colorful treat that looks beautiful and tastes sweet! It’s often made using sugar syrup that crystallizes, forming large sugar crystals that can be enjoyed on their own or used as decoration for cakes and other desserts.

Ingredients

Scale
  • 2 cups granulated sugar
  • 1 cup water
  • 1/2 tsp cream of tartar
  • Food coloring (optional)
  • Wooden skewers or string
  • Flavoring (optional) (such as vanilla, mint, or fruit extract)

Instructions

  • Prepare the Skewers:

    • If using wooden skewers, soak them in water for about 10 minutes to prevent burning during cooking. If using string, tie it securely around a stick or pencil, ensuring the string is not touching the bottom of the jar.
  • Make the Sugar Syrup:

    • In a saucepan, combine the sugar, water, and cream of tartar. Stir the mixture over medium heat until the sugar dissolves completely.
    • Bring the syrup to a boil, then lower the heat and simmer for 10 minutes, stirring occasionally.
  • Add Food Coloring & Flavoring:

    • If you want colored crystals, add food coloring to the syrup during the last minute of simmering. You can also add flavoring at this point.
  • Cool the Syrup:

    • Remove the syrup from the heat and let it cool for 10-15 minutes. You want the syrup to cool down but still be liquid.
  • Start the Crystallization:

    • Pour the syrup into a clean, dry glass jar.
    • Dip your skewers or string into the syrup, coating them evenly, and place them upright in the jar. The syrup should be deep enough to fully cover the skewer but not touch the sides of the jar.
  • Let the Crystals Grow:

    • Leave the jar undisturbed in a dry, warm place for 4-7 days. Crystals will begin to form on the skewer or string as the syrup evaporates.
  • Harvest the Crystals:

    • Once the crystals have grown to your desired size, remove the skewer or string from the jar. Let the crystals dry for a few hours before enjoying them!
